Tastes surprisingly great! Nice to use the humble spud instead of pasta or rice for a change. This would work really well with sweet potato too

Didn't have salsa so used enchilada sauce...so will have a different flavour ..par boiled the potatoes but worked really well .. defo on the to-do again list
