Love this salad as I’m a sucker for potatoes. I did tweak a wee bit and added a chopped up Granny Smith apple and coriander by the bucket load (because I love coriander with anything). The first time I used the recipe I’d bought Feta by mistake but that worked well too.

I didn't, I just boxed up the leftovers and ate it the next day. I didn't, i don't think the dressing would freeze well, but it's easy to make, so you could freeze everything else and then make the dressing as you need it
