Loved this recipe. Did the sweet potato in the oven. But thought adding the cheese to the sauce was a great idea. I would normally have this without the cheese. I plated up and allowed others to put their own guacamole, salsa and sour cream on the top and it was definitely a hit. So much so that I couldn’t get a photo before folks started eating!! A hit in our house!
