I had to substitute plain soft cheese with garlic & herb, as well as mozzarella with cheddar. It still tasted absolutely delicious and very filling.

can this be cooked in a pan rather than a slow cooker? what is the benefits from slow cooker?

Yes it can be cooked in a pan on the hob etc . Benefits are you can leave in the slow cooker before you go to work and when you come home have a protein packed meal ready to be served
